History
Trinidad and Tobago is a republic of twin islands located in the southeastern part of the Caribbean. Tobago is the smaller of the two islands, and its capital is Scarborough. It was originally settled by the indigenous people ( Tainos and Kalinagos). The island was subjected to Spanish raids and attempted colonization by the Dutch, British, French and Courlanders . Through slavery, indentureship and colonization Tobago consists of a diverse population. Trinidad and Tobago gained independence in 1962 and became a Republic in 1976.
The national bird of Tobago is the Cocrico ( brownish in colour with a long tail) and it can be found throughout the island.
Food
The cuisine of Tobago is a diverse one. It's what locals call "callaloo", meaning a variety. With a blend of African, Indian, Chinese, European, Latin American, Lebanese and Italian, just like our diverse culinary fusion so too is our multicultural and multiracial population.
Curry and Blue Food is a must try when visiting Tobago.
Our local version of curry which is somewhat different to the East Indian version; a special curry blend of spices, herbs and freshly cracked coconut milk, is a must try!
Dasheen also known as Taro Root which turns to a shade of blue or indigo when cooked. We use the term Blue Food to describe all ground provision- dasheen, eddoes, yam etc.
Over twenty years ago Tobago House of Assembly ( THA) started the Blue Food festival to integrate the tourism and local agricultural sector. Blue Food is a must try; filling, tasty and multidimensional.
The most beloved dish in Tobago is either curry crab with either dumplings or ground provision. A perfectly married combo of local sweet and spicy curry and blue food. A tasty alternative to curry carb is lambie ( sea conch). Many food vendors offer this option.
